Upma

Ingredients : 1 cup rava (semolina) 4 Tbsp Oil 2 cups water 10 curry leaves 2 green chillies (whole) 3 red chillies (whole) ½ tsp black gram dal ½ tsp Bengal gram dal 1 medium-sized onion (chopped) 2 tbsp corn ⅓ tsp red chilli powder 1 tsp salt 1 tsp mustard seeds ¾ tsp sugar Juice of 2 lemons Few coriander leaves Handful of cashew nuts Method : 1. Dry-roast semolina (rava) until it just begins to turn brown, then keep aside. 2. In a large saucepan, heat the cooking oil. Add mustard seeds and wait for them to sputter. Then add curry leaves , slit green chillies, red chillies , soaked channa dal and split urad dal. 3. Add chopped onions and fry until they become slightly brown. 4. Add some corn , salt, red chilli powder and then add the roasted rava. Stir for 1-2 minutes to let the flavours combine. 5. Then add double the water, and keep stirring properly to avoid lumps. 6. Ingredients for Vegetable Frankie Recipe Refind Flour Rotis 4 Green Peas grated 1 medium Green peas parboiled and crushed 1/4 cup Oil 1 tablespoon Cumin seeds 1/2 teaspoon Ginger finely chopped 1/2 inch piece Green chilli finely chopped 1 Red chilli powder 1/4 teaspoon Turmeric powder a pinch Garam masala powder 1/4 teaspoon Salt to taste Potatoes boiled and mashed 2 large Fresh coriander leaves chopped 1 tablespoon Dry mango powder (amchur) 1/2 teaspoon To Serve Green chutney 4 teaspoons Onion sliced 1 medium Vinegar 1 teaspoon Chaat masala to taste Method Step 1 Heat oil in a non-stick pan. Rava Dosa

Ingredients Semolina (Rava) - 1 cup Rice Flour - 1/2 cup All Purpose Flour (Maida)- 2 tbsp Buttermilk (or Curd) - 1 cup Onion - 1 (finely chopped - optional) Cumin seeds - 1/4 tsp Crushed peppercorns - 1/4 tsp Green Chili - 1 (finely chopped) Ginger - 1 " (grated) Cilantro - 2-3 strands (finely chopped) Curry leaves - 1 strand (finely chopped) Salt - as needed Sesame oil or Ghee - for making dosa Optional Ingredients Cashews Mustard seeds Method Mix the rava, rice flour, maida and required salt in a big bowl.  Add the sour curd (or buttermilk) and mix it well without any lumps. Add required water to make a batter thinner than normal dosa batter. Add finely chopped onions, green chili, cilantro, curry leaves, grated ginger, cumin seeds and crushed peppercorns to the batter.(Note :- If you do not enjoy onions, do not add it. My mother in law likes to pop some mustard seeds in some oil and add it to the batter....

Ingredients for Blending Yogurt – 2 cups Water – 1 cup Salt – to taste Turmeric Powder – a pinch Blend all the above ingredients and keep it aside. Finely sliced Shallots – 5 or 6 Slit Green Chillies – 3 Red Chillies – 3 Curry Leaves – A sprig Finely Sliced Ginger – 1 tsp Turmeric –  A pinch Fenugreek (Uluva) – A pinch Jeera (Cumin) Seeds or Powder – 1/4 tsp Oil – 1 tbsp Mustard – 1/2 tsp Preparation Method Heat oil in a deep pan and splutter mustard seeds. Saute shallots, green chillies, red chillies, ginger and curry leaves for 2 minutes. Add a pinch of turmeric, jeerakam and fenugreek. Stir for a minute and keep the seasoning aside. Reduce heat and add the blended curd mixture to the same pan, stirring continuously. Keep on stirring till it becomes warm. Never allow it to boil. Add more salt if required. Ingredients for Ragda Pattice Recipe Dried white peas 1 1/4 cups Potatoes boiled and mashed 4 large Turmeric powder 1/4 teaspoon Asafoetida a pinch Salt to taste Cornflour/ corn starch 2 tablespoons Green chillies chopped 2-3 Oil to shallow fry Green chutney as required Sweet date and tamarind chutney as required Onions chopped 2 medium Chaat masala 2 teaspoons Fresh coriander leaves chopped 2 tablespoons  Chopped tomato and pomogranate  seeds   Method Step 1 Soak dried peas in three cups of water for about six hours. Ingredients: Chiroti Rava/Sooji 1 Cup Sugar 1 Cup Ghee ¼ Cup Milk 2 ½ Cups Cardamoms 2 [Finely powdered] Raisins and Cashews Instructions : Place a thick bottom pan or kadai on medium flame and add 4tbsp of Ghee in a pan. Once the ghee melted add raisins and cashews till they become fried and transfer them into a small vessel. Now add Semolina or Chiroti Rava to the same pan and fry it until it gets a nice aroma. To the same Pan or Kadai, add 2 cups of milk and allow it to boil nicely. Then add 1 cup of sugar to the boiled milk and allow sugar to dissolve. Add roasted Rava slowly to the boiled milk and stir evenly. Adding Semolina slowly avoids the formation of lumps. And cook for about 4 to 5 minutes till the milk gets evaporated properly. Ingredients of Dahi Vada 1 cup dhuli urad ki daal (husked black gram)-soaked 5-6 hours, and ground to a paste Oil for frying 2 1/2 cups yogurt-beaten smooth 2 tsp salt 2 tsp roasted and powdered cumin seeds 2 Tbsp chopped coriander leaves 1/4 tsp kali mirch 1/2 tsp chilli powder 1 tsp kala namak (black rock salt) Chaat ka masala for garnishing How to Make Dahi Vada Beat daal well to make it light and fluffy. Heat the oil. Shape the wadas and fry in hot oil, to a golden brown over medium heat. Lift out of the oil and put into a pan of salted water. Repeat this with the rest of the batter. Ingredients ½ large onion, chopped 5 cloves garlic 1 inch ginger 1 green chilli (remove seeds to reduce heat if needed) 1 tsp oil 2 large tomatoes ¼ cup raw cashews (soaked for 15 mins if needed), use ⅓ cup for creamier sauce ½ to 1 tsp garam masala ½ tsp paprika 1 tsp dried fenugreek leaves (kasuri methi) 6 to 8 oz sliced white mushrooms ¾ cup or more peas ½ tsp or more salt ¼ tsp ore more sugar 1 cup chopped spinach (optional) cayenne to preference cilantro for garnish Instructions Blend onion, garlic, ginger, chilli with a few tbsp of water to a puree in a blender. Heat oil in a large skillet over medium heat. Add the above puree. Cook for 5 to 7 mins or until the onion smell is not raw. Stir occasionally.
